Quick and Easy Bun Recipe

Case of the Mondays? Sometimes you need a quick and easy meal idea for those days when you don’t meal prep. 

I typically plan the meals I want to make for the week in advance so I have all the ingredients on hand and don’t stress myself out trying to come up with last minute meal ideas. But…….on Monday I had a doctors appointment that threw my whole schedule for a little bit of a loop

When I got home from the appointment it was about 3:30PM and I still had NO IDEA what I was going to make for dinner. I didn’t take any meat out in advance that morning (which I typically do) so I was winging it. 

 

So I decided to make some breaded chicken cutlets that I found in the freezer (I usually make my own and this is my favourite recipe), brown rice and to whip up a batch of my quick and easy no yeast buns.

Occasionally a sauce on the chicken would is great for added flavour so I decided to make a quick meatless gravy to go on top of the chicken.  

Anything quick and easy is right up my alley on days I fall behind schedule. The meal came together fast and was delicious if I do say so myself! If you are in a rush or need inspiration for dinner, try these out! And don’t forget to comment below on how it turned out!


Quick, Easy, No Yeast Buns

Preheat oven to 375 degrees.

2 cups Flour

2 tsp Baking Powder

1 cup Milk

4 Tbsp Mayo

1/2 tsp Salt

Combine ingredients into a bowl or bag, thoroughly mix and divide evenly into muffin pans (will make approx. 1 dozen small buns or 8 medium size). Bake for 18-20 minutes. 

If you are looking to make a lovely sauce to go with chicken or another meat but are pressed for time. This recipe is perfect! It has excellent flavour! And if you have non-onion fans in your house like me, you can reduce the amount you use in this recipe. And if you prefer beef stock instead of chicken, just swap it out! Totally versatile. 

 

Easy No Meat Chicken Gravy

1/4 cup butter

3/4 cup Onion (I used 1/2 cup as my family members are not big onion fans)

1 cup Stock (I used chicken bullion mixed with one cup water)

2 tbsp Flour

Salt and Pepper to taste.

1-2 tbsp of cream for extra richness. 

Melt butter in pan. Add onions and cook for 5-8 minutes stirring often. You want the onions to get browned as thats where the flavour comes from. When onions are browned add in flour and stir together for 1 minute. Whisk in stock and cook uncovered until thickened. Roughly 5 minutes. Whisk in Salt, Pepper and Cream (if you are using) to taste. 

Serve hot. 

**If you want an extra touch of richness you could add in a tablespoon or two of cream at the end.
